Energy Bars

Ingredients

 60 g Butter
 60 g Honey
 60 g Muscovado sugar
 20 g Flax seeds, ground
 100 g Pumpkin seeds
 150 g Rolled oats
 100 g Pecans or walnuts, roughly chopped
 60 g Dried cranberries, roughly chopped
 100 g Sunflower seeds

Mix oats, nuts, and seeds and bake/roast in the oven at 200 C for about 10-12 minutes (keep watch, so as to not burn them). Once done, transfer to a fireproof bowl and combine with cranberries.

Combine honey, butter, and sugar in a pot and put on high heat to caramelise. Add a pinch of salt while bubbling. By controlling how much the sugar caramelises, you can control the consistency of the bars. Longer caramelisation means tougher bars.

Pour over the nuts and berries and fold them under. Spread on a baking sheet, and carefully (hot!) press into shape. Let cool for about an hour, then cut, while still slightly warm.
