Salted Oat and Choc Chip Cookies

The salt in this recipe takes this simple cookie and makes it something special.

 170 g Butter, melted
 220 g Brown Sugar
 110 g Castor Sugar
 1 tsp Vanilla Extract
 1 ½ Flax egg thick (1.5 tbsp flax meal + 4 tbsp warm water) or one egg and 1 egg yoke
 300 g Plain Flour
 120 g Rolled Oats
 ½ tsp Baking Powder
 200 g Chocolate
 100 g Walnuts
 1 tsp Sea Salt Flake

Preheat oven to 180C.

Using a hand held mixer, beat melted butter, sugars and vanilla in a bowl for 2-3 minutes. Add egg and yolk and continue beating until light and creamy. Stir in flour, oats, baking powder and salt, then adding chocolate and walnuts.

Roll into desired biscuit sized balls, press them a little flatter and then sprinkle with some extra salt.
Bake for 6-8 minutes until slightly golden.

Add a mashed banana (great tip if using oil instead of butter and your dough doesn't come together) add extra flour as needed to bring back to a good cookie dough texture.
