Broccoli Burgers

Tasty and versatile snack, or meal

 1 Head Broccoli (or up to 500g)
 2 Eggs
 ¾ cup Almond Meal
 1 tsp Lemon Rind
  cup Cheese (parmesan, feta)
 1 pinch Salt

Fry up broccoli until tender (alternately bake or steam). Once cooked, chop into small pieces or blend.

In a bowl, combine broccoli with remaining ingredients. Form into patties.

Cook in a frypan with olive oil over a medium heat for 7 minutes (or until golden and cooked through) on each side.

Attempted with aqua faba, and they didn't stick together so well. Could try with a flax egg.
