Buckwheat Galettes

 200 g buckwheat flour
 400 ml water
 0.50 tsp Sea Salt

Combine all ingredients, whisking well to combine.

allow to sit at least 20 mins (or leave overnight to ferment).

Cook in a hot skillet, cooking for approx. 2 minutes per side.

If desired, add filling while cooking the second side, and fold in the edges to attain traditional galette form.
